With the popularity of TV chefs Emeril Lagasse, Alton Brown, and the Food Network’s series Iron Chef, a LIFE member suggested we find a speaker who is an expert in the kitchen. Well, here you go.
This workshop will cover the basics of cooking, from knife skills to a variety of cooking methods, with emphasis on how they can be applied in your own kitchen. We will learn how to add flavor to dishes by using herbs and spices. Come with your questions about what is happening with what you are preparing at home, or dishes you’d like to prepare. Chef Knapp and his culinary students will demonstrate their skills by preparing tasty tidbits on which to nibble.
Roger Knapp is the Executive Chef and Instructor at Bates Technical College. He graduated from Bates Vocational School in Commercial Cooking, then continued his education by earning his degree at the Culinary Institute of America in Hyde Park, New York. Roger has been a Chef for many fine hotels around the United States, to include the Sheraton, and Ritz Carlton in Atlanta, GA. He also ran his own catering company before being asked to expand and grow the culinary arts program at Bates. He has been teaching for 23 years, and is a member of the American Culinary Federation.

Class offered by Learning Is ForEver, a non profit organization, affiliated with Pacific Lutheran University and Road Scholar / Elderhostel. Space limits this class to 30 participants. Preregistration is required.
Street parking is extremely limited. Please consider carpooling or taking the bus. There is a lot next to the Main Library ($1 an hr. cash, on the corner of 12th and Tacoma Ave). If you choose to use this lot, you would need to allow time to walk 2 blocks uphill to the college.
