Story by Jake Brake
What’s happening in the Bair? When is it going to re-open? I am sure many of you have been asking those questions of anyone who might be able to give an answer. The truth is … there is a LOT happening in the Bair and I am confident that our new tenant, Sarah Cannon, WILL be able to open early this Spring!
It came as a shock to us on the Bair Committee, and to Sarah herself, when we learned in late October that many of the Pierce County health and sewer department rules and regulations that applied during earlier years of restaurant operations had changed, and that The Bair did not retain ‘grandfathered’ status that we assumed existed following the departure of our last tenant. As a result, we have been working hard to bring The Bair into compliance with these new code requirements for restaurant operations, and Sarah’s original planned opening of November 1st has had to slip to April.
The Bair Committee has been busy updating plumbing and electrical services in The Bair, as well as constructing a mandatory walk-in refrigeration system and building. The bottom line is: I can see light at the end of the tunnel and no – it is not an oncoming train. As I have said in the past two newsletters: Keep an eye on The Bair Store windows for news of the grand opening!
